Gold Hibbard was a trade name used by Hibbard, Spencer, Bartlett and Company of Chicago on firearms they retailed.
The Interchangable was a trade name on shotguns used by Schoverlin-Daley & Gales for guns made in Belgium, c.1880 - 1914.
So, I'd say your shotgun was imported by S-D&G and sold by H,S,B&Co sometime around 1900. There were a lot of Belgian manufacturers during that time, and your gun could have been made by any of them. These may have a little value as collectables if they are in like new (not restored) condition or occasionally purchased by people participating in Cowboy Action Shooting, but the majority are sold as mantle decorations for less than $200.
If you are tempted to shoot it, remember it is 100 years old and not intended for modern ammunition. It would be like trying to drive a Model T at interstate speeds - may work for a while, but pretty soon things are going to fly apart with disasterous results.
