Hi! I stumbled on this bulletin board by accident, but I think your project sounds very exciting. As I'm here in Florida, there's not much I can do for you, but I design children's museums and science centers for a living and have worked with a great maze designer in England. His name is Adrian Fisher, and he creates all kinds of mazes in Europe and the US. His work with pavers is really beautiful, and he also does hedges and labyrinths (and maize mazes, for a seasonal approach to maze fun). He's a great, funky guy to work with. His site is www.mazemaker.com if you're interested in checking him out. At the very least, you might get some ideas from the images he has posted there.

Also, you might be able to do a garden of flowers from medieval and Renaissance tapestries (one tapestry style was called "mille fleurs" or "one thousand flowers"). I'm thinking at the moment of the Unicorn Tapestries held at the Cluny Museum in Paris, but there are any number you could work from for ideas. Most of the plants and flowers in those tapestries have been identified. This is a cool site from the Met in NYC that tells about some of the plants and their symbolic meanings:

I think there also may have been gardens that were supposed to tell the time based on which blooms were most open at that hour (I think they were planted in sections), but that's a vague memory.
