Here in NSW, the grain harvest ends somewhere in January (of course local conditions permitting), So Lughnassadh in February is still appropriate for Corn Dollies as it does represent the Sacrificed grain.

Another thing that can be done (to add a spin on Moonlovers idea) is that a trip into nature where you collect fallen leaves and other bits and your children can make autumn wreaths to hang about your home as a symbol of the changing seasons.
