There was a 500 with a Bukh in it at my Yacht Club once (poole)

She had to have the engine compartment shifted forward with a little extension, and a new P bracket fitted further back so she could swing a larger prop. She also had a set of stops fitted on the rudder stock to prevent reversing the blade into the prop.

Once all that was done she was always a bit stern down, always made worse by having crew on board. You could try a larger anchor I suppose.
