Moving the mainsheet track to spill some wind certainly eases the helm.

You have hanked on sails but for those of us with an overlapping furling headsail the headsail can cause a lot of the weather helm too.

The helmsman tends to put up with it, but if you sail with an autohelm you soon learn to trim the sails. There is no loss of performance, in fact by reducing the drag on the rudder you go faster.
