Mary and Henry my experiences are as follows:-
1 The lining is thin. Screw fixings soon pull out. It is better to use a ply backing or use one of the hollow fixings available in merchants.
If you lift out the trays you will see there is a lot more space, however using this space may take time and money. Some people have ideas of filling it with foam to make her unsinkable, I suggest lots of research before doing this as the foam needs to be closed cell and there are other pitfalls. I think the neatest arrangement is making up cupboard fronts with hinged doors and fixing them into position. Incidently the space beneath the shelf/backrest can be used stuffing gear bags or rucsacks into the space in such a way that you can still sit comfortably using the backrest. You will need to move them to sleep because you will then need the extra space.
3 I found some cheap elastic cargo nets in a motorcycle clothing store. Or use fine fish netting. I believe garden shops sell netting.
4 I use the space under the cockpit for a dinghy, battery box and a large spare anchor. The battery box will shortly be relocated at the bottom of the steps and I plan to fit a shelf unit behind the steps.
4a I preferred to buy a collapsable water carrier from a camping shop (or rigid if you prefer) and use it to top up You will need a funnel though.
5 Most seem to have a small "C" shaped table fitted around the keel case and sliding on top and bottom battens.
Others have a pedestal table which can also be fitted in the cockpit using a second base.
Paul has a simple but effective velco wrap around the mast base to allow the foresail to slide round without getting caught up.
No doubt others will add to the list.
I think the above will keep you busy a while.
