Some people would actually say 'ay habitual' just to stress they are not dropping an 'h'.

I believe dialogue should be written to reflect how the character would speak.

Were the character an English teacher, she might say - How are you?

Were the character an ordinary bloke hanging out at the corner, waiting for somebody to play pool with him, he might say - Hey! How are ya'?
