I agree entirely with your opinion that Ian McEwan wrote the development of HP's humanity. I think this was done movingly and with great subtlety, particularly when he visited his old mother - very interesting choice of words in their "dialogues". The sequence of events in Henry's life showed how in the arc of only 24 hours he was to realise his own humanity. However:
I wonder what you think about the actions of Henry after the ordeal with Baxter in his house, that Henry chose to operate on Baxter in hospital rather than remain with his family, reunited, in particular with his pregnant daughter. Does this underline his humanity / sympathy for the man with the dangerous life condition despite his abhorrent nature? Does this give more of an idea of revenge, in helping Baxter to live he extends the life sentence of his disease? Or does it call into question Henry's priorities as a family man? I was surprised that he decided to go myself, but found myself questioning the reasons why I accepted his actual course of action!
There was a message about turning this book into a film; I feel too that it ran like a film as I read it; in particular those great slower-motion clips of the movements of Baxter and Henry after the prang with the car. I am usually dubious about fantastic novels being turned into films, as I think it's rarely done successfully - although can often help struggling A level students to access good novels and feel more motivated to read the novel itself. I am not keen on seeing the film of Enduring Love as the film has had some dire reviews, and it was such a great novel! But if someone decided to make Saturday into a film, in my opinion it needs an actor like Charles Dance in the lead role, with a seriously good director.
