Subject: Hong Sau

What is the significance of using a mantra like hong sau or so ham etc with the breath?

In zen and Bhuddist meditation they seem to just observe the breath rather than use a mantra as well?

Doesnt using a mantra tie you to the mental level,I mean to say stop one going deeper into the breath?

Anyone tried bith ways etc?
