Subject: Best wood for a workbench in a Houston garage

I'm thinking of making a workbench similar in size and style to this one: https://www.americanworkbench.com/the-ashley-hall-four-station-workbench.html

I'd appreciate some input on the type (or types) of wood I should use. The bench will be in a garage in Cypress with no heating or A/C so lots of heat in the summer, lots of humidity always. I'm not going to paint or stain it but will probably coat it in polyurethane. I'd like your thoughts on that, too.

This would need to be done at a reasonable cost but I'd be willing to spend a little to make something that will last and is (possibly irrationally) good looking.
