Subject: Oiling concerns

I want to know if boiled linseed oil can be used for a kitchen countertop. Is it non-toxic, as far a food prep goes? I am in a isolated port in alaska and we have linseed, but tung oil or mineral would be a wait. Also, would it certainly make it toxic if i cut it with paint thinner for the first coat? Or would the other coats cover it enough?
