HI Linzie.

Yes, you could use the self-stick red oak edge tape.

I have used this tape for the edges of pine shelves to make them look like red oak, since that is about all you see anyways.

You'll have to decide whether or not looking at the edge of the tape is acceptable for your design and the piece you have made. Try a short section of tape on a scrap piece and put your finish on to see if you like the look and appearance. If so, you're done! If not, consider actually glueing and clamp a thin veneer strip instead of using the PSA tape.
