I got this recipe once from my good buddy Snowolf The Magical Chef! :-) Enjoy folks - even I can follow her recipes so this is bound to be a great success!!!

Lobster Kiev

Ingredients
125g (4oz) softened butter
2 cloves crushed garlic
1 teaspoon lemon zest
1tablespon chopped fresh chives
1tablespoon chopped fresh chervil
1tablespoon chopped fresh parsley
4 large green lobster tails
1 cup plain flour
salt and pepper
1 lightly beaten egg
2 cups breadcrumbs

Method
Combine butter garlic zest and herbs.
Spoon butter mix onto plastic wrap and roll into a log shape and freeze until firm.
Remove lobster meat from the shell in one peice and devein.
Cut a deep pocket down the length of each tail careful not to cut all the way thru.
Slice butter and place 2-3 disks in each pocket.
Roll each tail in the flour that has been seasoned with salt and pepper.
Then dip each tail in the egg and then the breadcrumbs.
Fry in hot oil for 5 minutes or until crisp and golden.
Transfer to a baking tray on 180'C (350'F) for 5 minutes or until cooked thru.

Serving suggestion
serve sliced on top of steamed fresh asparagus
