Just kidding! Great to see you here. I can't give you an absolute answer. For example, I do not use a traveller. But 25 degrees of heel is about right for hard to windward with your hull..or sounds right anyway.

I rekkon GPS to a known waypoint then a VMG number is the only way to tell....or use a plotting chart.

You could also find your correct compass settings compared with the GPS-flat motoring, no wind, then sail the compass course and compare your two headings again.
