I'd use the GAWR ratings. Added together, they're typically higher than the GVWR. As long as I'm not exceeding and axle rating, I'm comfortable.

I guess it depends on how different the tires would be. If you're close, I see no reason not to change two. The only downside is rotation or having a spare tire that's not stout enough. On thing - I tried to change tire sizes last time I needed front tires. Tire shop wouldn't do it unless I changed all the tires. Because of liabilities, tire shops are becoming less flexible about what they'll do.
