You're doing fine. A lot of people "claim" they can play for hours upon hours, but to me, it all amounts to just another fish story. I had the personal displeasure of hearing a piper play who claimed they usually practice for "1.5 hours straight" and the pitch was unbearable, the reed was so weak. Bottom line, there are no shortcuts to stamina, you build it over time. And if you sound great with a solid medium reed for 30 minutes, then that's great! I'd rather only hear you for 30 minutes, than the others pipers and their paper thin reeds for 30 seconds. It's all hard work and time. You're definitely on the right track.
