I guess it turned out all right, it got me a 6th place ribbon, but to be completely honest I really don't know squat about brisket. I've only done a few in my life and I'm not even convinced I know what a good one is supposed to taste like. Brisket remains a mystery to me.

I'm still not sure about mopping either. I have done pork butts where I went all out; marinating, injecting, mopping every hour, absolutely slaving over these things in pursuit of what I thought would surely be perfection, and if I was honest I didn't feel they were any better than the ones that I do nothing more than just rub, let sit overnight, and cook uninterrupted. I know brisket is a lot less forgiving than a pork butt, but maybe the same principle applies. Maybe in our unending enthusiasm for the great worl of BBQ we're making things more complicated than need be.
