Subject: Peameal/Canadian Bacon

Graham Jones (GJ) and I did up some peameal and Canadian bacon yesterday afternoon before the Super Bowl. Turned out great! We used Reg's recipe, which I'm fairly sure is posted below somewhere. We had 3 little slabs of pork loin, of which we sliced about 5 pieces to fry up as straight peameal, the rest we smoked over pecan and apple til 155 internal. Damn good stuff! The 'peameal' we fried looked a lot like storebought, but the juniper berries and thyme certainly added a flavour component not found in stuff at grocery store or butcher shop, and the smoked stuff, well it was just awesome! Definitely recommend the pecan for smoking this bacon!
The meat was 2.95/lb, the brine probably about 75 cents worth of ingredients total, and then some charcoal on top... so for 3.25/lb it's better, and cheaper, than anything you'll get in a store!
