Hi Mop. I think all the buzz is over the poisonous nature of the stuff. If it's not used in the right proportions in the brine the results can be dangerous. I'm going to boil the ham before smoking to remove as much salt (and saltpeter) as I can.
I will be doing another ham with TQ following this one; I'll post the results and the differences, if any.
Thanks for the concern, I have checked several sources and am within even the most conservative guidelines.
