hi Brad and congrats on the new smoker . you should season it for sure . you can spray everything down with pam and start a fire , get it good and hot then its a go after this . everyone has their own favorite re the wood but you can't go wrong with the fruit woods . i'm partial to hickory on shoulder . as far as charcoal i generally use lump but lots of the guys use briquettes . again a personal choice . as for thermos i like the Taylor remote . it has all the bells and whistles and its about $ 40. at a restaurant supply store . good luke and get her fired up . reg
