Morning Reg. I have made sausage using caribou, moose and pork. Moose is just as lean as the caribou. The ratio we used was 10#caribou, 10# moose and 30# pork. We used pork butts and ended up with between 17% and 22% fat. I personally don't like to go any higher than that, because I hate a greasy sausage. I just cooked up a couple of rings that I had in the freezer and you should have seen the vultures take it away. It lasted only about 1/2 hour. Just a note that I have been told--caribou meSat has NO nutritional value whatsoever. Supposedly if ALL you ate was caribou meat you would eventually die.
