Hey Reg, I'm ordering a couple of fresh hams for this weekend and getting them in the brine for the 24th cook. Going to use your method and I will be reporting on the outcome. That day I will be doing up to 24 turkeys for the locals, a couple of chickens and some barons of beef. Should be close to a load for old Bertha. The weather isn't a factor, unless it is real windy. That affects the draft on the chimney.
