Someone had mentioned poking a needle thru the end of the egg as this brings the yolk into the centre of the egg. I've done some without this 'trick', where the yolk is almost to the side of the white and when you remove the yolk it can rip the white part, making it hard to put the filling in there. Do you use the needle trick?
