Howya doin'? You are right. Many caterers, especially in the US, settle for the doctored commercial beans. Gotta tell ya though, every time I come out with Mop, compliments on the homestyle beans versus everything else, hog included, have to be two-to-one! Not to swell his mellon any more, but Roger does do some fine beans when he puts his mind to it, that's for damn sure!
