Sounds good from here,. the only thing I would be concerned about is the length of time it will take you to cook them butts at 190º, you will probably be looking at minimum 2 hours per pound so if your butts are ten pounders, there is a good chance you will have 18-20 hours wrapped up in cooking time.

I like to cook mine at 250º, I find no lose of quality yet speeds cook time dramatically.

Butts if wrapped and stacked in coolers will stay PIPING hot for several hours with no trouble and the longer you leave them, the more au jus they seem to produce, within reason of course.

If it were me and I didn`t have room to cook tem all at once, I would do half one night and the other half the next.
If you think you can get them all in there then by all means, load er up, you won`t use any more fuel, you will use double if you spread it out over two cooks...

Also. you mentioned that you will do some this weekend then the rest for the gig on the 24th?, thats a week before Peter, I`m afraid your product might lose a bunch of quality by then, thats pretty far in advance, you might be batter off to cook it, chop it and freeze it if you are going to go that far in advance....
