Subject: Eye Eye Cap'n

With all the recent posts regarding smoked eye of the round, I figgered it was time to try one for myself. Man oh man, am I glad I did. Talk about a juicy cut of beef !

It started Friday at my local Costco, picking up a AAA eye that was cut in half. When I got it home, I brined it in a solution of 1 cup sea salt in 1 gallon of water. I added onions, garlic, celery salt, some chili powder and a few bay leaves, and let it sit until Sunday am.

08:00 am...removed eyes from brine, dried, painted and rubbed
09:15 am...fired up the Brinkmann using oak/cherry mix
09:45 am...put'em on
11:00 am...first mop (and first beer)
12:30 pm...second mop (4th beer)
14:00 pm...third mop (losing track of beers)
16:00 pm...remove eyes, wrap in foil and place in cool end of smoker (final internal temp was 155 deg)
15:15 pm...peeled foil off and saved drippings for gravy
15:30 pm...neighbour sniffs out his eye, takes it home
15:45 pm...carve thinly, put on kaiser, soak in gravy
15:46 pm...dive in !

That had to be one of the best beef sandwiches that I ever had.

Many thanks to all who have posted recently regarding eye of the round. I probably never would have thought on smoking such a lean cut.
