Sounds like a great menu, John. We have been doing the "chicken from Hell" in Jamisons book lately with rave reviews especially from the kids; they love them!!!! Not really as hot as the recipe sounds. After an hour and a half at 200 to 210 (in my pit) the peppers are still a little crunchy and the chicken just cooked through. I've been buying the larger peppers mainly cause i'm lazy and don't like to mess with the little ones.
Good luck with dinner. Post some more pics; the eyes looked great.
