Ron, there is no reason why you can't eat after only a 15min rest. The only reason i know of to wrap in a towel & place your brisket into a cooler, would be ,if you need to kill time & are not ready to cut & sevre to your guests.
You can keep it warm for hrs this way. Another thing is if you find your food is alittle on the dry side, then you can use this method to bring up the moistuer(sp).
