hiya Peter. the potato's are the regular russet, coated with olive oil then rolled onto coarse salt so that some of the salt penatates the skin, not to much salt though. then they just go in the smoker bare. they will take 3 1/2 to 4 hrs at 225.

the rub for the ribs is just one i make myself. reg
