Yup, sounds like you are on track there with your times; temps could be a tad higher. Beef ribs really need to render out. They can take a strong rub, so something you'd use with brisket is on target. Only drawback with beef ribs is that they don't reheat or hold nearly as well as pork ribs if you are using these for a cater (this based on what I've heard, not from personal experience).
