hey PB , you don't need anything real fancy to do your smoked beef . a sheet of plywood , some metal shelves like the ones in the fridge you threw out , a hotplate from a garage sale or CTC , a handy husband or boyfriend or both lol , and a few hrs you could be ready to go . won't be as good looking as Qfan but it will work real well . then your all set to do eggs , cheese , olives , sausage or whatever else you want to cold smoke . BTW Morton's Tender Quick has all you need in it .5 % nitrate and .5 % nitrite mixed in with the sugar and salt just follow the directions in your recipe . reg
