morning Ron , you don't have to use the racks , they are used mainly for space . you can load more ribs using the rack . the thing i don't like about the rack is that the fat runs away completely without being used to baste . when doing quite a few slabs what i do is use square stock (4in) then stack another grate on top , giving me 4 grates to use . in my opinion i like the idea of using the rendered fat along with the rub it takes with it dripping down on the other ribs before falling into the water pan . make any sense ? reg
