Hi Mop:
This my homemade cream of mushroom soup that I used to make at the restaurant.

1 cup butter
1 cup onion, finely chopped
2 pounds mushroom, finely chopped
1/4 cup flour
2 quarts chicken stock
2 cups cream
salt and pepper, to taste

Melt the butter in a pot and add the onions and mushrooms.
Cook over low heat for 15 minutes, stirring ocasionally. Sprinkle with flour and cook for a few minutes more.

Slowly add the stock and heat, stirring, until it reaches the boiling point. Reduce heat and simmer for 20 minutes. Allow to cool off the heat for 20 minutes then stir in the cream, add salt and pepper to tast. Reheat but do not boil.

Yield: 3 quarts
