Thanks for the speedy and informative reply, Reg. I greatly appreciate it and the offer of help.

I am starting to understand the presentation more, but let me ask one more thing. How on earth do you effectively present pulled pork and keep it attractive?

In answer to some of your questions, I do not have a 'team' so to speak. My darling wife is the best assistant in the world, and I have some interest from my brother-in-law and a good friend, although nothing concrete from either of them. I'm going low-tech with equipment, I have a bullet smoker and access to another. I also have a barrell grill which I can use if I need to. I really don't have any preconceived notions of winning anything, but I think it will be fun to see if I can place in the top 50% with my el-cheapo equipment. I haven't got a shelter yet, but it is on the list. My wife is also planning on making me a folding prep table in her workshop. That's right, I said HER workshop.

Anyway, I'm really looking forward to meeting some/all of you soon and giving one of these competition things a try.
