good morning Johnny . the brisket turned out just fine thanks . a little drier than the first one but still very good . this one was even trimmed more than the first one and i screwed up and forgot to get some fatback , had to use the bacon i had cured and that was also a little lean . as far as keeping the temps going it was real easy . i use briquets on long cooks like that . i had a good burn going early and had to adjust the fire down to temp this time . the brisket was a flat only and i had it on for 10 hrs using a method i learned from Rick Salmon from KC area and he was good enough to share with me . the wardens beans were to die for and the slaw was good also . as for the beer , it was same old , same old lol . a good day had by all . reg
