Subject: Mexican Butt you say?

Hello everyone. I miss U.
Although I drop in from time to time to read some of the posts, I haven't posted anything for a while. Nothing of interest to say. But Sunday I decided to experiment with a 4 lb butt. I'm posting this because of the non-traditional feast I made and thought of sharing it with this board.
First, Thursday I applied adobo ( It's a paste you make with ancho peppers, spices, garlic, vinegar and water) on the butt in a ziplock and kept it in the fridge. Sunday while this exquisite meat was smoking over pecan wood I made a salsa verde with fresh tomatillos, not too spicy. When the meat was ready and pulled, I mixed some of the salsa verde with the meat in a bowl. We wrapped the stuff in warm tortillas with more sauce and salsa cruda (homemade of course). For sides we had guacamole (BTW a real guacamole should never look like pureed baby food, it's gotta be nice and chunky) and corn on the cob on the grill. Aye, Aye, Aye Caramba!
