Subject: Bruce,Mop,anybody!!!

Hey guys,purchased a Chargriller "Smok'in Pro" at Sobies on Sat.Was going to wait until Ont.Gas BBq got the Brinkman SNP in to compare the two but went ahead anyway as the fellow I had spoke to there several times assured me they were off equal quality.Anyhow, got it together after about 4 hrs.on Sat.,sprayed it down with veg. oil and lit it up.Let it run for about 4 hrs. on a mixture of lump,briquets and split seasoned maple with a good smoke go'in.The charcoal pan and ash grate(one piece) in the smoke chamber of this unit can be turned upside down when smokin' to act as a smoke/heat diffuser.It held very steady temps. but the problem was I could'nt get it much past 200º yesterday with a small shoulder and a couple racks of spares.I was just wondering how much coals I should use to start off this rig?I put 3/4's of a charcoal starter in the firebox and threw another 3/4 of lit on top.Is this enough?Also very windy yesterday.Any thoughts or advice would be appreciated.Bigj.BTW,ribs turned out great but, had to finish shoulder in oven.
