Just keep trying. I hatched all of mine out, and some hate to be held and will nearly get out of the house before we catch them again!

Here is a way that has worked for me only with females, but it works if you keep doing it:
Hold the female in your hand with your fingers away from her while standing up. (If you're not standing up, she will try to get away more.) Place your other hand on her wings and hold her there until she's comfortable. Then take that hand and stroke her back going the way that the feathers grow.

I have had success with this. In fact, I have held a female doing this for almost an hour before she flew away! Never stop giving up.

Also constantly talk to your birds. You can speak jiberish and it still works. Don't ever be silent when hamdling them, because predators in the wild are silent. When you are holding them call them by their name repeatedly. It sounds weird, but it works and they become aware that it is their name.

Few of my birds accually eat out of my hand, but what you can do is put the food in a bowl, and hold the bowl up to them, trying not to make too much movements, and just wait. They will come and eat after getting used to it.
