The babies will stop for up to 24 hours between the first chip and actually emerging.
How long is left before you stop turning the other eggs? If it's only a day or two then it might be best to stop turning now, otherwise keep going but try to open the incubator for as short a time as possible and only when strictly neccesary.
I'm not totally sure what you're asking whether you should turn off, if you mean the incubator then that needs to stay on even when eggs are hatching.
