Personally I break open every single egg from chicken or quail to find out why it died. Even the ones I can candle and see how far along they are I still break them open to be sure. You can learn a lot that way. For my first few hatches I also kept a journal and every time I turned I wrote down temp, humidity, and every adjustment I made or anything that happened to the incubator. Then after I broke them open I compared to pics of chick embryos online and pinpointed the day so I could go back in my journal and find out what happened or what the numbers were that day. I can't stand throwing an egg out and not knowing why because then I'm doomed to repeat the mistake. The success rate of my first hatch was less than 1%. The last 2 hatches were 96% and 83%.

I also can't stand the idea of possibly throwing out a healthy chick that got stuck in the egg. That's why to break them open I start by poking a hole in the fat end of the egg where the air sac is. From here you can listen for peeps and if nothing break a small bit of shell off so you can look inside. Eggs will still hatch this way. In fact I just did this to a late egg and found a peeping chick so back in the bator and he hatched out fine overnight. If you don't see a live chick you can continue to carefully break shell as far as you want until your curiosity is satisfied. Afterward I just throw the dead eggs away in the winter or in warmer weather I do the whole thing behind the barn and leave the mess there.
