Hi Jill
I did know someone with both japanese and button quails and i think i remember that the japanese ones are very tame and calm and will let you pick them up even if they haven't been hand raised. So i think japanese quail would be your kind of quail (nothing wrong with buttons of course, they're so cute and little :)
