We went 5 years ago this May... it was actually late May and early June. Our friends there joked that we came from California and I got a sunburn in Scotland in our first few days in Edinburgh. It was warm enough to eat ice cream on our afternoon in St. Andrews too. They said heat waves like that weren't common. Then we did a few days road trip and we hit some cold and misty weather in the Highlands. I had to bundle up in my thin coat for our visit to Eilean Donan castle. The warm bowl of soup I ate there was much appreciated so I think I was still cold under my hooded coat, sweater and shirt. Further south it was grey and maybe foggy in Oban but it cleared beautifully when we arrived on the isle of Iona. I don't remember being especially cold in Inverness even when we went walking in the evenings.
The further north you go the more likely to be chilly, especially at night, but you should definitely bring at least a thin coat if you'll visit the west coast and its islands. A heavy coat will probably be unnecessary unless you're going to hike in the mountains or visit the far northern isles (Orkneys and Shetland).
