This is a late answer, but maybe useful. Although slower, a Stearman can pull almost as many Gs as an F-14. It's not just speed, it's also wing loading and power to weight factors. But the closed cockpit of a fighter, with the G-suit, rubber face mask, heavy helmet and constrained air flow produces a much hotter and more uncomfortable ride then the open cockpit, leather helmet of a Stearman.
