In I Will Remember You, Angel became human when he got blood from a Mohra demon in a cut on his hand. However, he had a soul when this happened; an unsouled vamp might become a soulless human instead.

Remember, though, these "rules" apply to Buffyverse vamps. If your fic doesn't take place in that 'verse, it doesn't have to follow the same rules.
