In this case, I think Joss was right. Remember, Willow didn't know she was gay until she met Tara - although "the Wish" episode certainly should have been a hint. Alyson played Willow as straight because Willow herself thought she was straight. If she had known of the upcoming plot twist from the the beginning, Alyson would have had to consciously avoid doing anything that might give away the surprise. Advance knowledge would have made her job harder rather than easier.
