Oh, right. The filter for the shortening. I forget how many days we could filter it before it needed to be replaced. Remember those 50 pound cubes of shortening? At Towson, we filtered the vats before opening until we started serving breakfast. Then the night shift got stuck with it. It paid $1.50 an hour when I started in 1973. All you can eat until they figured out how much we were eating. Everyone put on five pounds in the first month!
