I haven't a clue as to whether the latex residue would "burn off" if the food is handled by someone wearing latex gloves. If I know that a restaurant uses latex gloves, I simply do NOT eat there. The latex gloves get pulled on and off, probably with a bit of a snap-that releases some rubber particles into the air, to settle here, there and all over everything - the food you would eat, the service utensils, etc.
My favorite little pizza shop had used vinyl gloves for years, and suddenly I was developing awful hives; a call to the shop and yup, they were using latex gloves. Our server would pull one on to fix my salad. :-( They listened to me, and promptly ordered a case of vinyl gloves. We're weekly regular customers. My local little fine-eats pub also switched to vinyl when I approached the owner and talked to her about it. So refreshing to be accommodated!
Stay away from places that use natural rubber latex gloves.
