That meat is not cooked thru! You are going to make someone sick out there! This is my restaurant and my name on it I cant have you making people sick, Birkoff turned around and tossed the plate back at one of the cooks in the kitchen. He turned around and moved over to the other station and tasted some sauce that was cooking and slammed the spoon into the sink. Did you forget what this is supposed to taste like?
Michael had heard that things at Horizonte were not going well since Birkoff started to cook each meal and oversee everything. It was clear that Birkoff wasnt happy, but that surely wasnt the reason why Michael was here right now. He was even disappointed that he had to come up here, but some things were much more important than pride.
Birkoff, a moment, Michael raised his voice to be heard over the commotion. In that moment, it seemed as if all the noise and rowdy action that was going on around in the kitchen stopped as Birkoff jerked his head around to see Michael standing there. In ways, it was like Birkoff was being summoned to the principal and that was not the way that Michael had meant for it to be.
Birkoff untied the apron and tossed it on a side desk as he exited the kitchen and rolled his shoulders back. Can this be quick? Its like they all have forgotten how to cook.

Just leaving Carla isnt enough, Michael started to move down the hallway towards the management office of Horizonte. Michael knew that this was what Carla used to do so he wasnt sure who was doing those duties right now. Birkoff opened the door and waited for Michael to enter. Ive gone more than just leave Carla Im volunteering in the mornings at a school I like it
Do you treat the kids like those people? Michael asked and Birkoff shook his head. Those are trained professionals
A trained professional is someone you should be seeing more of, Michael quipped as he shook his head back and forth. Birkoff rubbed his shoulder and slumped into a chair. Michael I left my wife who is pregnant but I know that right now she is toxic to me I guess she hasnt been by to tell Nikita that she is sorry.
Neither have you, Michael declared quickly as now that they got to the real reason why Michael was here. Nikita was in a mood that no one seemed to be able to break her out of. To know that Jurgen was frustrated and running out of ideas scared Michael so he was starting to take whatever actions he needed to in order to get Nikita out of this funk. She had a small maternity leave as it was and he didnt want her regretting that she didnt get more out of it, because Nikita would carry that guilt with her for a long, long time.
I didnt push Nikita I didnt cause her ankle to get broken. I really had nothing to do with what happened I believe its obvious that I have no control over my estranged wife, Birkoff announced to Michael. But it was just the words that seemed to show that maybe Birkoff hadnt realized enough of what he had to do. In essence, he was taking what Carla did and using it as an excuse.
Michael rolled his shoulders back and tilted his head. In my years of business Ive learned that sometimes you have to take the high road and do and say things that you dont believe you should have to do in order to make someone feel better and in the end it benefits both you and that person

Seymour, Michael interrupted and stopped Birkoff from continuing. You are one of Nikitas oldest friends and you in her mind brought Carla back into her life I need you think about telling her how sorry you are.
Birkoff stood up and moved away from Michael, turning his back on Michael. Michael shook his head. Birkoff hadnt changed at all.
Have you thought about how hard it is for me to even think of what I did and how much pain I caused Nikita? Birkoffs voice cracked as he couldnt even turn and look at Michael. I left my wife because I hurt Nikita being with Carla Carla made me worse and I dont know who I am now
Michael never wanted Birkoff to break down, but in ways, this was probably what Birkoff needed.
Kita is a wonderful, giving woman, Birkoff. She is going to forgive you. But I need you to tell her all of this... Please, Michael whispered and those words brought Birkoff to turn around. The tone said something that Michael hadnt spoke out loud. Michael was scared about something and that something had to be Nikita.
You can start being a giver by giving her the apology that she will never get from Carla, Michael looked around and stepped out of the office. Standing there, Michael leaned back in. And give your staff a break they are used to some independence and are probably just making nervous mistakes Im sure that you did quite a few of those when you were working with Bobby or Mario or any other leading chef in Las Vegas.
