Wow - I didnt realise youd bought a chapel - I thought it was an abandoned churchyard that you & hubby had more or less just 'adopted'! You lucky sods, owning a chapel!
Have you tried poisoning the Knot weed using a herbicide with 360 g/L Glyphosate? It's sold as a product called "Roundup" here in Oz. Maybe you could get it at a place like B&Q or a large hardware type of place?? Comes in small bottles pre mixed but you can also get it cheaper in a 1 litre container unmixed for about the equivalent to 9 quid. For 'woody weeds' youd mix 15 mls per 1Litre of water so it goes a fair way. Kills anything it touches. I use it in my yard. Ive heard (dont know if its true) that it doesnt damage the soil quality - the chemical neutralises once it hits soil, but it wouldnt matter for you if your soil is already contaminated. For large weeds what you do is slash them, then spray the roundup, (or paint it onto the cut of really thick stems for eg, small tress or thick Lantana), and the poison is taken by the weed into its root system and the plant dies in a few days to a week.
