When you're dealing with freedom to do something, you also have to consider the infringement on other people's freedom that you cause by doing that. Political correctness is all about balancing that. And it's not restricted to issues of legality. If you substitute "comfort" for "freedom", that's how the Beaners issue applies. Nobody's saying the store can't call themselves that. But it would be courteous to Mexicans if the store changed it.
